This is the start of the 4 week HP, kicking off with Turkey Meatloaf Muffins. It was a bit of work putting this dish together because I did not have all the ingredients to make it an easy process. However, patience and improvisation is something you have to learn from the start, so that you do not make excuses when things get a little challenging. If you are in my position and find a diet that can possibly heal your gut, you will put in the work i.e. using your beautiful brain becoming resourceful instead of complaining about things you don’t have but rather make lemonade with what you have. In the end, the dish came out absolutely delicious, something I’ve never had before, so it was a real treat for me and something I continue making keeping as a healthy snack in my refrigerator.
