This recipe required scallops but since I couldn’t find scallops, I had to improvise using mussels. You’ll notice a few things I mention which I could not find and for every item I simply improvised. I decided to place this on a burger bun making for a delicious, sweet savory burger with subtle notes of the maple and orange zest. This is another item I’ve added to the “SimpleLife” recipes but needs to do a bit more improvisation to cater to my husband’s taste buds. I think this combination made an scrumptious mussel burger. I think a bit of white wine might be the answer to perfect the mussel mixture. But the sauce as it is really penetrated the mussels leaving it juicy and flavorful.
