The maple glazed salmon is a dish we had on the stop plan and as mentioned there, the orange zest just does not penetrate the salmon meat well. all those delicious flavors sits right on top of the skin. I once again did not marinate this over night but what I can say I cooked it better this time on 350 degrees FH not burning the skin. That also made a big difference in tasting the flavors of the maple syrup and orange zest when biting into the skin. Still a delicious meal.
